Beef Smoked Chorizo BBQ Meatload"

Adjust this to your liking
I had to make one for family so it was 3.5lbs

2pd grd beef
1pd chorizo (prefer from butcher less greasy.)
1/2 pd pork sausage
1 med.Red pepper
1 med.orange pepper
1/2 yw.onion
2Tbsp favorite rub ( I used Heffer Dust)
1/4C. Favorite BBQ sauce (I used Mississippi BBQ)
2 eggs
Panko bread crumbs ( to your liking for binder help)

Sweat the peppers and onions in olive oil

Mix panko crumbs and eggs together as binder , pour it and the cooked peppers n onion mix over top all 3 meats, and the rub and BBQ sauce, and mix together with your hands until mixed evenly.
Cook on grill mats (or alum. Loaf pan) @ 230° for 2-4 hours depending on size. Until 155° internal temp.

form into a loaf ,I used a grill mats. You could use a meatloaf pan also.

after about an hour-hour and a half brush the top with BBQ sauce.
Depending on size*
Cook for 2-4hrs @ 230°
I used my smoke tube also.

Wow ...all this talk about about meatloaves...looks like IM going to have to make another one!! The sandwiches the next day are even better that the first meal...LOL

We cut ours in about 1 inch thick slices and put them back on the grill to heat them the next day. ;)
