Didn't get a chance to post when it was first done but here is the first brisket attempt. Started off with a 16.5 pound full packer from Restaurant Depot. trimmed it down to 13.75 - Rubbed it down with a light coat of olive oil and seasoned with just salt and pepper. Smoked at 225 fat side down...

If that 700 was headed to Virginia and being delivered by SAIA it might be mine. I've been tracking it and it is now at the local shipper facility. Waiting for the call to arrange delivery. If I don't hear from them soon I'm calling them! :cool:
