Took a tube of Jimmy Dean tube of regular sausage covered with bbq rub cooked on Bull at 275 until internal temp reached 165. Great flavor and easy way to make sausage biscuits.
Used what I had on hand and it turned out great. 350 degrees until internal temp in thigh hit 165. Took about an hour and a half.
Used the V8 instead of beer
Injected with Goya Mojo(strained)
Slathered with Dukes and applied creole seasoning
Wanted to share the work/Storage cabinet that I ordered from Sam's. Stainless steel top that is Handy as a staging/serving space. Also a great place to change out foil on heat shield. Top shelf is great storage area for second shelf when not in use. Cabinet is great for grill grates and probes...
Like others I do not think a lack of the shelf is hurting you at all. Ribs look great.

Lowe's close to us carries the Pitboss competition blend. 14.00 for a 40lb bag. Friend of mine with a RT says they are great. Picked up 2 bags yesterday.

Had mine for several months now. I replaced my large Weber with the Bull. Still have a large smoker for bigger cooks and different taste profile. You know what I miss about my Weber. Not a D*** thing. You will love your RecTec.
Headed up to the Lake for Easter Weekend. Wanted to cook the steaks here because we do not have a RecTec up there. Cooked 3 Ribeyes that we purchased from Sam's. Cooked low and slow then finished them off on the Grill Grates. Used RecTec's Beef rub for the 1st time. Can't wait to try them.
