Good to know, I’ll have to try it again. Thought I cut against the grain properly and pretty sure it wasn’t overcooked (see picture above). Definitely still was eaten almost immediately so can’t be too mad! Thanks for the tips!

I decided to start it off simple so just did equal parts salt, pepper, and garlic powder. Smoked at 225 until IT 130, pulled and put it on the bullseye to sear. Let it rest for about 15 mins and then sliced it up against the grain. The flavor was great but it was bit tougher...
Finally got my hands on a tritip! Was hoping to smoke it tonight but not sure how to handle it yet so gotta do some research. Anyone have any suggestions? I’m going for a med rare with a reverse sear most likely.

I do have a dremel, I thought I may try that tomorrow with the stripped screw, it’s just unfortunately the corner screw that is a tight fit to begin with so not sure I’ll be able to get it in there.

These are skinless, so don’t think there would be a concern for rubbery texture. Unless it kind of forms one on its own. Thinking I’ll just throw them on with a rub and see what happens.

Had a half of a flank steak leftover from another recipe so decided to throw together some fajitas tonight. Reverse seared steak with peppers and onions in a cast iron on the grill. Loving this grill.
Last minute smash burgers tonight with the sear grates were amazing! Forgot to get a picture of the gussied up burger with the fixins but got a snap of a couple left over burgers.
In case any one was curious, after playing phone tag with CS, finally went through diagnostics. They’re sending out a new auger motor, here’s hoping it fixes things! In the mean time, got some St. Louis ribs ready to go tomorrow!
