    Recteq Fest 2023

Has anyone been before? Apparently this year they've got the Carlie Daniels Band headlining, and some other local acts along with "food and BBQ". Seems odd to have a major BBQ/country music event in the south during football season. UGA plays that day less than 2 hours away. Worth going?

How long to cook an 18lb bone-in shoulder @225?

Most people estimate anywhere from 1-1.5 hours per pound, but I'm curious if the bone will have an affect. How much time would you budget for the cook?

    American Wagyu brisket

My best friend's birthday was this weekend and he asked me to smoke him a brisket. Our local butcher just happened to have some American Wagyu briskets in stock.

Precise temp setings on the new app

The new app looks nice, but having to little circle for the temperature setting as opposed to being able to enter the number makes it difficult to get a precise temperature for your probes or grill. Am I missing something?

Bullseye or gas grill to complement RT-700?

I've got an RT-700 and love it, but obviously it's not ideal for hot/fast cooks as it can take a while to heat up, especially in the winter. I'm contemplating getting a gas grill (probably a Weber) for hot/fast/searing but I see where some people use a Bullseye for the same purpose. What are...

What to do when thin part of brisket is done but the thick part is 20 degrees cooler?

As you can see, I've got probes in both ends. Currently, one is 140F and the other 120F. I'm concerned that if I take it off when the thick part is done, the thin part will be overcooked, but if I pull it when the thin part is done, the thick part will be undercooked. What to do?

    Dealing with pollen

Now that pollen season is approaching for many of us, what do you do to deal with it, if anything? I got my RecTeq last year right after pollen season ended so I haven't had to deal with it until now. My smoker sits on a covered screen porch, without a grill cover. Do you just wipe off your...

Smoked mac & cheese and prime rib was a hit this Christmas!

I hope everyone had a nice Christmas. Ours was a small gathering since nobody is traveling to us this year; it was just me, the wife, the baby, and another couple. Smoked USDA Prime prime rib, Berkshire ham, smoked mac and cheese (6 cheeses + kurobuta bacon + truffles), loaded mashed potatoes...

Critique my mac and cheese recipe

Since we can't do a big family gathering this year and so will only have a few dishes, I want to make them each amazing. I've read through a bunch of recipes and from them created this below. Thoughts? What can be add/removed to improve? INGREDIENTS 1/2 pound elbow macaroni 6 slices...

What's on the menu for Christmas at your house?

I'm looking for ideas. In recent years I've been doing a lot less of traditional foods for Christmas. So far this is our menu: Snacks: Smoked chex mix Smoked cheeze-its Jamon Iberico de Bellota Prosciutto di Parma (aged 24 months) Iberico chorizo Main: Smoked Prime Rib Roast (USDA Prime from...

What all are you smoking for Thanksgiving?

I suspect there will be a lot of smoked turkeys in our RecTeq community. :) What other smoked dishes are on the menu this week?

What are your favorite pellets and why?

Title says it all. What do you like best and, and why? Flavor? Low ash? High/accurate temp? What would you stay away from? In my RT-700 I've only used the RecTeq Ultimate Blend, Lumber Jack Competition Blend, and Lumber Jack Pecan. I honestly don't know that I could tell you the difference...

Other than common things like pulled pork, brisket, etc, what's your favorite thing to smoke on the RecTeq?

Basically, what do you smoke on the RecTeq that other people wouldn't think about?

Other Middle Eastern smoked leg of lamb

Thought I'd share my latest, made with my homemade Middle Eastern seasoning rub. INGREDIENTS 1 small onion (chopped) 2 tablespoons lemon (juice of one small lemon) 4 cloves garlic (minced) 1 tablespoon apple cider vinegar 1 tablespoon olive oil 1 tablespoon salt (optional, I didn't use any...

Been out of town for a while - getting back into it

As the title says, I've been gone for a month and a half, so it's good to be back to cooking on the Rec Teq. First use will be a bunch of drumsticks slow cooked to give them a nice smokey flavor, then I'll crank it up to crisp the skin. The three seasonings are Old Bay, Slap Ya Mama cajun, and...
