    I’m sure it was good. The only reason for going low at first is to get a smoked flavor in the chicken. Staying low will always produce rubbery skin on chicken. Staying high the entire cook will make the skin crispy but will produce very very mild to no smoke flavor in the chicken.

    I’d just have your gasser ready on full heat and sear your meat without the IR attachment once you’ve slow cooked it in the recteq to about 110* internal. If your grill will get 600+ you should get a good sear.
