I do them both ways. When they are separated I put rub on the sides and ends and makes extra them “barky” all over. One probe is reading really low, the other is right on target. Tomorrow I’m going to use my bbq guru cyberQ to compare probes and ambient temps to see if there is any difference between the rec tec equipment and bbq guru. I’ve used the guru and am pretty confident in its accuracy.Looking good, why do you separate them, I normally just cook them and then separate?

I never use a probe for pork ribs but for the thick beef ribs, I usually do.I get the extra bark, but seems like separating them would make them cook different. Also I never use insert a probe for ribs, I go by temp/time and then test for tenderness, but that is just me

Started beef ribs this morning. Halfway done. Looking Good. I’ll post when they are done. Tomorrow- pastrami.
