Rubs Boston Butt Injection and Rub

Here is a wonderful boston butt injection and rub recipe for anyone looking. Makes enough to do roughly 16 - 18 pounds of meat.

Dry Rub
  • 1 tablespoon granulated sugar
  • 1/2 tablespoon dark brown sugar
  • 2 1/4 teaspoons garlic salt
  • 2 1/4 teaspoons kosher salt
  • 1 1/2 teaspoons paprika
  • 1 teaspoon chili powder
  • 1/8 teaspoon dried oregano
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon ground cumin
  • 1/8 teaspoon black pepper

Injection
  • 3/4 cup apple juice
  • 1/2 cup water
  • 1/2 cup sugar
  • 1/4 cup kosher salt
  • 2 tablespoons Worcestershire sauce
 
Similar to what I do
3/4 cup apple juice
1/4 cup apple cider vinegar
2 tbls worcestershire
2 tbls what ever rub your using

seems like a lot of vinegar but you don’t really taste it when your done. I also use the left over as a mop sauce while smoking
 
Here's a recipe I've used for years for large cookings. You can always make smaller batches.

Possum Trot Mop Sauce:
one gallon water
3/4 to one gallon white vinegar
one gallon apple cider vinegar
one box of brown sugar
one box of black pepper
one box of table salt
two pots of strong black coffee

*Add white sugar and molasses if you want a sweeter base

Mix all ingredients together and mop onto Boston Butts anytime you open the grill to check on them or at least once an hour.
