Going to do my first competition this weekend. Small “backyard” for my first as a pose to entering with the big boys. Even though I think my RT680 can Handel it. Doing wings, brisket, pork ribs and pulled pork for my chefs choice. Any tips or thoughts? How long should I anticipate to be done to set boxes up and deliver? Feeling a bit overwhelmed with it right now. Any help is appreciated.
