I forgot how to adjust the temp on the cooker.. I have it set to 275 but my Thermoworks has the air temp 15-20 degrees off. Thermoworks is taking reading from the center

your air temps are going to vary based on where you put your probe. You adjust it via the controller menu but you will need to take several more temp readings and understand how the temp varies across the grate surface. Once you figure that out, you can determine how you want it adjusted. And for the record, 15-20 degrees doesnt make a statistically significant difference when it comes to cooking.

Remember when you do adjust it that the probes adjust in temp, but the internal is adjusted in percentage %.

I do remember that just dont remember how to calibrated the cooking chamber prob... I use the Thermoworks to monitor the protein temp...
