I did lots of research and after 5-6 days, I’m going to echo that I should have pulled the trigger much earlier! Ordered Sunday, shipped Monday, arrived Tuesday evening, assembly and first fire Tuesday night, first smoke Wednesday morning.

Chicken thighs, low and slow 200F-235F for 3 hours with a hot burn to crisp before serving.

I missed a paragraph in the manual:
If you have completed a low and slow cook that has caused the accumu-lation of grease on your foil, you must change the foil before cooking at high tempera- tures. Failure to do so will most certainly cause a grease fire in your grill.

I lost both meat probes and my Polder probe in the ensuing blaze. ? I saved the chicken but had nonstop panic as I watched fire drip out of the grease spout! The chicken got great reviews though...I personally think it would have tasted better without the adrenaline hit. ???

I told it to go all out. It started slow and took off like a rocket. My Trailblazer and I are still establishing mutual respect. Lol!

Saturday I ran salmon on the other side of the grill grates on “Lo” while I did things around the house. Add arugula, kale, and some homemade lemon pepper dressing.

Today I did a pizza (garlic, pepperoni, fresh basil) no pictures on that one as the keto crust malfunctioned and I wound up with an inside-out calzone instead. It was tasty but presentation was on par with a preschool play doh project...green,white,red all over.

Love all your pics.....your food looks delicious! Great cooking info too.......welcome to the forum, great info and helpful folks here.
 
I love part about changing your foil before cooking at high temperatures, just what I want to do after several hours on low is to take apart the grill to refoil, one more reason I don't foil and just scrape now.
Your food pics are making me hungry.
