Be retired is just hell..? Yesterday I got up had my morning Jo and decided to throw on the Big Center Cut Cowboy Ribeye... Well I set up the Bull to low smoke for the fist couple of hours watching the internal prob temp slowly rise to my desired 140’... then my wife said honey will you take me out for a few errands.. you can just drop me off and I’ll run right in.. ? I’m thinking why not... got the Bull app on my phone so all should be good... Stop after stop turned into quite the escapade.. I adjusted the Bull on the fly... low to 250’ no problems... when we got back home it was a perfect internal 140’ and now ready for the last 8 minutes of searing with melted butter & garlic .. removed and covered the ribeye... kicked the bull up to 500’ it takes exactly 4min per side flipping it cross ways at 2 min.. Here’s my results.. shopping with my lovely bride to boot..! Best grill ever!!!

Fantastic! I assume you pulled the steak before turning the grill up to 500? Did you wrap it in foil? How long did it take for you to get from 250 to 500?
 
Yep.. I pull the raised cookie sheet with my Ribeye on it , I loosely cover it in foil.. cranked the Bull up to 500’ ... 10 minutes later placed the Ribeye basted in melted butter & garlic, directly on the Bulls sear grates..@ 4 min per side .. I like to rotate At 2min 90’ to get a nice looking cross checking.. I also re-bast the ribeye after each flip .. the big thing is to take if off and let it rest for 15-20 min before carving..? Here’s a few pictures of a Porterhouse..
