Bull Normal pealing / what is this

Hi - might be a dumb question but here goes anyway. I am about 10-12 cooks in on RT700: mix of low-slow and some high/max for pizza and searing. Tonight noticed this pealing on the top underside of barrel and sidewall of barrel on the probe side. Able to wipe/peak it off with hand and looks like normal stainless under the pealing. Used to see this for sure on the painted gas grills but surprised to see this on RT700.
Is this paint or just charring/soot?
Any tips tricks to clean, prevent, confirm what this is?

I see the same thing from time to time maybe not to this extent but just scrape it off as best as I can and smoke on.
 
Creole build up. Just like a fireplace chimney. It comes from burning wood. Just clean the inside with a crumpled up foil ball and the outside with bar keepers friend. It won’t hurt anything but I wouldn’t want to eat any of it when it flakes off onto the food.
