Great use for leftover brisket and really tasty.

Ingredients:
4-6 oz. smoked brisket
Red onion (sliced thin, about 1 T)
5-6 oz. grated Mozzarella cheese
BBQ Sauce

Crust:
12” pizza skin

Optional apply to finished crust:
1 T melted butter
1 T parmesan cheese

Instructions:


1. Preheat pizza stone in Rec Tec to 500 degrees for one hour.
2. Stretch pizza skin to 12” diameter.
3. Spread BBQ sauce on the pizza skin.
4. Break up the brisket to small pieces and mix in some BBQ sauce and then plan on pizza.
5. Top the pizza with the cheese and then add onions. Put in oven and increase heat to 550 degrees.
6. Bake for 6-8 minutes; remove and brush with butter and then sprinkle the crust with the parmesan cheese. Place on a cooling rack for 4-5 minutes before slicing.

Finish by applying some BBQ sauce over the top of the pizza.

Notes: You can also add some cheddar cheese to the mozzarella cheese!

Please explain this "leftover brisket" - not sure I grasp what that is.
When I smoke a brisket 12-14 lbs, there is always leftovers. I divide the brisket into meals and some for pizza and BBQ sandwiches. So for this recipe I take 4-6 oz. that has been frozen, put it in the refrigerator and the next day use it for pizza.

I know, it seems impossible....
But my goal is always to have to much.
Makes great BBQ sandwiches, tacos, pizza, breakfast tacos with eggs....
The list goes on.

I agree, off the smoker directly is the best, but the left overs, especially breakfast are great. My kids love brisket and hash and brisket enchiladas and of course on a pizza too.
