Pork Smoked Rib Tips

Rib tips are great tasting and really cheap. I bought a case a while back when they were on sale. I have smoked them and Sous Vide them and they always turn out great. This is the first smoke I have done with the Rib Tips on my Stampede.

Ingredients:
4 Rib Tips
Yellow mustard
Pork Rub

Directions:
Pre-heat smoker to 235 degrees.
Apply yellow mustard to all sides of the rib tips and then apply rub.
Place the ribs in smoker, check at 4 hours and add sauce. Flip apply sauce again in 30 minutes and pull at 5 hours.

Notes: The smoke level and taste was spot on. They could have been a bit more tender, next time I will do the 2-2-1 method.

Looks great. Never made tips. Going to make spare ribs tomorrow, as soon as it stops raining in NY.
