Tonight was " SWINEAPPLE".
It was "ok"....I used some inferior bacon from a place that used to sell the best around. Round 2 will be better* live and learn.

Nice, easy, center pork tenderloin chops tonight. Lean, tender and juicy, 1" thick, smoked on the 590 first, then reverse seared on the IR burner. Yummmmmm

Chicken Wing Cage Match...

On the left, dusted with Dirty Gurl and corn starch then spun in Frank's and butter. On the right, Asian persuasion, Freakin Greek, and cornstarch - then spun in parmesan garlic (started with B-Dubs recipie and added more Asian and Greek)

375 for an hour

Parm garlic. For the win!

No pictures, but today I smoked a 6lb rack of spare ribs that I rubbed with salt, pepper, granulated garlic, paprika, Italian seasoning, and fennel seed.

Smoked it at 220 for 3-1/2 hours then cut it into 2 rib sections and braised it in homemade tomato sauce and sliced onions in the oven for another 2-1/2 hours at 325. Slipped out the bones, removed the cartilage, shredded the meat and tossed it back in the sauce and finished with some fresh basil.

Made a great ragu for pasta or rice.
 
Made pulled pork for baked beans and had leftover pulled pork and had made cured pork loin a few days before and again had some leftovers. So I tried cuban sandwich on the bull using the flat top. I would do it again but toast the bread a little longer.

Nice! Did you end up getting that at Costco? I assume we shop at the same one and I’ve never seen them there, even though I do look for them.
Yes sir I did.

I'll go out on a limb here and say you're probably shopping at the Lexington location. If that's the case they typically have them in the long meat isle up against the butchers window.

However, this weekend they were hiding them. The tomahawks were across the isle on an "end cap" fridge. Where they normally have the ribs on sale - next to the chickens and fish.

I've noticed at least at this location, if they do have tomahawks then you gotta get them right then as they typically don't last long. When I bought mine they only have 4-5 more left.
 
I've got a pork butt in the smoke and a pound of ring bologna on next to it. :)
