That is great to hear. I no longer cover my 1250 as it is now under cover, but that thing was tight. My Traeger flat rock griddle has a zipper and its a fantastic cover because of it, glad RecTeq finally is getting on board

Report back. I have done fat up/down while on the top rack and have found a better finished product with fat down. Being from Texas, it's always fat side up the doing brisket, so im sort of a rebel with my fat side down.

For what it’s worth, on my 1250, after I trim my brisket down from a packer, I sit it top shelf, fat side down.
I’ve tried fat up and fat down and prefer down. Also allows me to spritz the meat side easier.

I use 2 of the grates, don’t need 3. I leave the two in all times unless space is needed. Never cleaned them outside of when they are hot, scraping any residual remains off. Don’t need to use any oil to make non stick, it’s basically non stick now from seasoning.
0-400 is a no go for me. Too much dirty smoke on the start up, don’t want dirty smoke on my food.

I do all my briskets overnight, put them on overnight, wrap in the morning, afternoon they go into the warmer for 6-7 hours.
