The thing is my low/slow cooks always take longer. Never anything else. 5.5 lb butt on now at 225 for 15 hours now and still only at 200. I don’t wrap bc I like bark, I understand wrapping speeds things up. Like I said before, my finished product is always great.

I performed tests as well with my own digital thermometer and it was registering the same as the bull for the most part at a variety of temp settings. That’s what’s kind of baffling me.
interesting you say that. I noticed mine fit, but man is it tight and obviously are over the drip pan. Did you use a standard cutting wheel on that grinder? I wonder if a carbide tipped metal cutting saw would work as well? I’d prob be able to make a much straight cut with that.

Man. Reverse sear is extremely high on my list of current priority’s. Always thought u had to do a 2-3” cut, but your pics tell me it will work for just about any. Been hoarding everything I see for the last few weeks and prob have 25+ lbs of assorted goodies. Haha
