3-2-1 Rib method

Hi everyone, I've been using the 3 2 1 method of smoking ribs @225 for years. However, lately
ive been smoking at 250 for approx 4 hrs and spritzing every 30 mins or so and not wrapping at all.
I was very pleasantly surprised that they come out just as tender (i prefer fall off the bone) and had a little crispness to them that i love.
Am i crazy or is wrapping/foiling a waste of time. Would love some opinions.

I’ve had success doing both ways. I normally smoke baby back ribs at 225 and chop an hour off 2-2-1. But if I’m having a bunch of people over and want to make sure the ribs are going to come out perfect I do the wrap to be safe. Always good to try new methods and not wrapping does produce similar results. Cheers!
 
I wrapped once. I don't care for falling off the bone on my ribs. I usually run ribs for 5 hours or so (225). Rub before start ...... then eat when finished. Sauce maybe...maybe not.
