Beef Ribs

So, I grew up on a farm. We killed and quartered our beef (and pork). Took it to a processor where they cut it to our specs. Fast forward to today-there is often some confusion over beef plate ribs and beef short ribs, Aaron Franklin (who knows something about beef) with an excellent video on how the process works.
