So I really didn't have time to cook for Cinco de Mayo and my grocery store was out of cilantro so I pushed our little celebration back to Saturday. Made Carne Asada, fresh pico de gillo and fresh guacamole. Marinated the skirt steak in mojo and then grilled it on the sear grates. Turned out fantastic. Substituted Landshark for Corona but it was all good.

Also, thanks for the advice on the sear grates. I found them on Amazon, wanted to give Rec Tec my business but I didn't want to wait for them to have the sear kits back in stock (whenever that is).
