Bull Fan and temp overshoot question.

Good morning! Cooking a bit of breakfast on my new RT-700 this morning. I have it and a GMG Trek set up and running. I noticed that the fan on the Trek is variable and my Bull seems to run at full speed all the time. Is this normal? The Bull also overshoots the set temp by as much as 40 degrees F if I have the lid open to adjust the bacon and such. The GMG doesn’t seem to be as concerned with extended lid openings. Is it the fan? Controller? Or is it me and that’s just how the Bull operates and I need to get used to it?
 
I think that's normal. The fan on mine mostly runs all the time. The exception is when I have it set really low. Having the lid open for any extended time will cause those over shoots. If you notice, the inside ambient temp probe is on the left side right near the front of the grill. Thus when you open the lid, outside air is right there for the probe to read and try to compensate for.
 
Fan is not variable and will turn on /off at lower temps or over shoot set point.
