Most people estimate anywhere from 1-1.5 hours per pound, but I'm curious if the bone will have an affect.
How much time would you budget for the cook?

The 1 to 1.5 is a good an estimate as anything, but that's a pretty big hunk of meat so your mileage may vary. Curious to hear a report on how SRF pork is. Their Wagyu brisket was incredible when I tried someone else's, but I haven't mustered up the courage to drop that kind of money yet...and at the moment, they're pretty cleaned out.

That's a good time frame but I wouldn't jack around with the low temps. Nothing hurt whatsoever cranking it up to 260° + and knock some time off.
