It has been unseasonably warm this fall in NC so, decided to have one more neighborhood BBQ before winter sets in. Purchased a Titan rotisserie over the internet, less than $200. Stacked up some cement blocks in the back yard to protect the cook from any wind. Purchased a small 50lb whole pig from a local farm and knew the smell of it cooking would be all the invitation needed for the neighborhood to gather.
Rubbed the pig inside and out with canola oil and Soy Sauce and a generous amount of rub. Cooked over a mixture of oak logs and Royal Oak charcoal. Basted the pig every hour with Chris Lilly's Barbados mop sauce. Six hours later, a delicious pig picking plus all the sides and desserts that neighbors showed up with. Party went on until 1:00am. Sometime along the night we emptied 3 bottles of Buffalo Trace and two bottles of Rum. Next morning all that was left was the head and some bones. Easy clean up, our local alligator took care of the leftovers.
