Keeping in mind I'm new to pellet smoking, can a water pan be used or even should it be, anybody use one in thier smokers? i was used to using one in my MES for several years. Comments?

Hey NickMac, sounds like we are both having fun with our new smokers. I've been smoking with an electric smoker for about four years or so. It's been ok but wanted to step up to a pellet smoker for some time. My only regret is I waited so long. Enjoy.

First of all, I'd never try to feed an army cause I was in the Navy. Second. I too have used a MES electric for about 4 years and from what I've seen of the stampede so far...I'm already looking for a spot to store the MES. THANKS.

Stampede is here and in it's place at my tiki bar. Burn in done now trying it out with a nice slab of ribs.
