Turned out great but I suck at cutting against the grain.

Put in a 7.5 lb brisket at 10 PM. In the past, the Masterbuilt would have had an hour of smoke on a handful of wood chips. It would have shorted out in the middle of the night and I wake up to 45 degree meat. Not today.
