I just started using my 590. After I preheat, the unit keeps going on and off for a while is that the way it should work?

Yes

Especially when set low & warmer outside temps. It is just a way to regulate the temp.

Yup totally normal.

It will do it on shutdown too. I read on here or somewhere that if you use it to grill, very hot like 475, don’t shut it down all at once. Slowly lower the temperature. so I’ve always lowered my temperature to 225 and let it cool down slowly and then shut it off. It works for me

A variable speed fan probably would have been a better choice for this application
