Very meaty and full of flavor, both from the smoke (notice the large smoke ring) and the pork belly itself. Each layer has a unique flavor which together makes an amazing taste.How was the texture of the meat?

I think so. It cooked for a very long time.Did the fat render out completely?
Picture below is the full meal. We had a cucumber salad to start while it rested, and my wife traditionally ate pickled cabbage as a child to balance out strong meat flavors, hence the sauerkraut.
