  1. Bull
"Zap" and "Steve" (Stephen Webber) we're lonely so I brought home a friend. Meet "Angus". Already conquered salmon and bacon wrapped bbq shrimp on the maiden voyage. Was so excited, I forgot to take pics of the finished product.

Half-chicken(s) are up next. Stay tuned...

Chicken was crazy-juicy and had good flavor. Skin was fairly crispy but the kids are not sold on the smokey skin flavor. Too many years of dried out gASS grilled chicken breasts. Who would have thought that "properly" cooked foods would take some getting used to!?!

I could easily do without even properly cooked chicken breasts. I'm a thigh guy...and good wings.

Ha, wings are next. Just bought a 10 pound bag at Sam's. I know fresh are better, but quantity rules.

Recepies anyone?? Dry rub or smoke then spin in hot sauce? I got the sauce and spice bundle. Maybe try a few combinations.

I just season with salt, pepper, and granulated garlic. 350 til internal reaches 185. Toss in sauce.

Sauce:

1-1/3 cup Frank's
1 cup salted butter, melted (two sticks)
3 Tbs ACV
1/2 tsp granulated garlic
1/4 tsp cayenne (to taste)

Serve with bleu cheese dip (I like Chef John's recipe from Food Wishes)

Excellent. Roughly how long is the cook? How's the skin, not too rubbery? I saw somewhere that corn starch crisps up the skin?!
 
I like to toss the wings in a little EVOO and then season with my favorite rub. On the 680 at 190 (extreme smoke setting) for about 1:15 - 1:30 to add a nice smoky flavor. Then bump the temp up to 325 - 350 for another 25-30 minutes. Wings are insanely moist and delicious. The skin although not crunchy crisp, has a great bite through when eating. My favorite way to cook chicken wings.

1 to 1.5 hrs.

The skin isn't going to be crispy like a fried wing, but they are right for me...definitely not rubbery.

Yes, I forgot about the oil...I spray a little vegetable oil on them after they are on the grill.
 
Burgers at 600 degrees, grill grates flat side up. Awesome! Forgot to take a pic while on the Bull but here is the last one. Super good char. Smash Burger without the need to smash!

Last Grill Standing!

And then there was one...

I gave it a week to see if the bull could replace both the other cooking appliances. It didn't take an entire week to convince me this is the only tool I need. Pretty impressive, considering it does what the top of the line Weber Summit and a purpose-built electric smoker can do, all in one handy little bull horned machine.

I thought he might be lonely, so I fed him some bacon:p
