I smoked it on low temp briefly to get some smoke flavor (which Rendezvous doesn't do) then I cranked up the heat to 350 until it hit 203. Rendezvous cooks it via direct heat about two feet over coals for an hour.When passing through Memphis I enjoy stopping by Rendevous if time permits. They look great! Out of curiosity, how hot and fast did you run the cook?
I used theirs. They actually prefer to call it seasoning instead of a rub, since it's not rubbed into the meat. A little goes into the baste for mopping, and the rest sprinkled on before serving.Did you use real Rendevous rub or a recreation?
