I highly recommend THIS recipe for smoked carnitas. I made it for FD today along with this Tortilla recipe (I substituted beef tallow for lard.) Turned out absolutely fantastic, and may be my go-to for carnitas. I used my Blackstone for the final crisping, but a CI skillet in the RT would work great too!
Cooked up some pintos and rice as well, along with m-i-l's fruit salad. Good stuff!!
