Yup, if you're making pastrami out of your corned beef a cold water bath for a day is definitely needed. I did a SRF corned beef round yesterday in an Instapot. I just lobbed it in with one beer, half a large onion, some garlic cloves, carrot, and some of the Amazing Ribs pickling spice (or at least as close as I could get with what I had in the house), and topped off with cold water. I was hoping for leftovers, but it was all gone in less than 45 minutes.
I must admit, I like home smoked pastrami better than corned beef these days, but I had too much other stuff going on yesterday.
