I was inspired to make ceviche tonight for dinner.

Fresh caught cod
Fresh limes
Jalepeno
Habanero
Serrano
Radish
Green onion
Red onion
Seeded cucumber
Seeded tomatoe
Cilantro
Chopped garlic
Avocado
Kosher salt (not table salt, not Himalayan salt) 8^)

Soaked the cubed cod in fresh squeezed lime juice for an hour.

Drained the cod (did not rinse) and mixed all ingredients together.

Mayo on crispi corn tortillas and Tapatio drips

Nobody complained

Oh, and some homemade chocolate chip & pecan cookies with ice cold milk!

Looks great NBK! Several Mexican women in Baja have told me the secret to perfect ceviche is ketchup! -adds a little sweet, a little tang, and ties it all together like the Big Lebowski's rug.

Yep, I use it when I build the tostada. Some people like it, some don't. I do like it that way, so good ad!
