I'm looking for ideas. In recent years I've been doing a lot less of traditional foods for Christmas.
So far this is our menu:

Snacks:
Smoked chex mix
Smoked cheeze-its
Jamon Iberico de Bellota
Prosciutto di Parma (aged 24 months)
Iberico chorizo

Main:
Smoked Prime Rib Roast (USDA Prime from Snake River Farms)

Sides:
Kurobuta bone-in ham
Smoked mac and cheese
Loaded mashed potatoes

What have you got planned?

We're actually thinking about a "seafood/fish" theme this year......(especially since we won't have a lot of family in this year). So I'm a big fan os Shrimp & Grits, as well as Scallops, Crab legs, Salmon, Cat Fish, etc. THAT SAID, I have a big Turkey breast we didn't cook for Thanksgiving (I cooked one, but froze the other), gotta believe it will somehow figure into the mix sometime this month.......<grin>

Im thinking of cold smoking some ribeyes then souvide and back on the bull with cast iron griddle
