Went to the grocery yesterday to pick up a few things. Wow, all meat was gone, and I mean bare! All but a couple of center cut sirloin and some chicken thighs, which I picked up also. I've not cooked center cuts before. I see many recommendations on how to cook. Hot and fast, to sear and slow, reverse sear....Raining today, gonna cook tomorrow. What do you guys recommend?
 
Think I'll put on low smoke for a bit, pull, then crank it up and put back on
