Fresh Pork Jowl - What do I do with it?

The wife got some fresh pork jowl from one of the local farms... I want to smoke it on the 680 but really have no idea what to do. Doesn't seem to be many recipes/guides looking through Google... Any recommendations?
 
Go with the guanicale. Mario Battali’s dad owns a business that makes it. There is a good Battali recipe online.

Last year I smoked a whole hog head, amazing experience.
The store "Salumi" is now under different owners and is in downtown Seattle.
Mario's Dads grandfather opened Seattle's first Italian Grocery over 100 years ago.
Oh he would be so proud of his great great grandson....
