What's Cooking on July 4?

Post what you're cooking today. Remember, no pix=it didn't happen.

I started late on my 3 bone beef plate ribs. Got them on at 8:30 am. 3 hours in at 225F. Thinking I'm going to have to bump it up and maybe wrap to finish by dinner time.

I made bacon for breakfast but sadly I will not be able to do the long cook today I was hoping for, we're supposed to go visit some friends and sit on his patio while he cooks. ?☹ Oh well, I hope everyone has a happy and safe 4th!! Cheers ??
 
I bought a 3# chuck roast which I will be grinding into hamburger meat. First time I will grind meat myself. Have not decided if I should cook on the 680 or over charcoal on my kettle.
 
Tagging on to this post, even though we are clearly past July 4th. Since I posted about cooking in cast iron in another post today, here is supper for tonight. Fried pork loin in cast iron on the Matador inspired by an episode of Backyard & Beyond posted by recteq this past week. I used a deep Lodge chicken fryer skillet as this small amount of meat would require way too much oil in the Matador pan.

Also fried some okra from the garden, onion rings and leftover pepper poppers cooked in the Bullseye, and served with some tomatoes, also from the garden.
