Well, for me, the debate is over...for now. Santa and my wife teamed up to get me the 7 piece Wusthof gourmet knives that come in a block. I used them on christmas day for our prime rib dinner and they were excellent! This didnt come with steak knives, but they are on the way.

I use Allegro marinade on beef jerky. Marinade for 4-12 hours and smoke for 4-6 hours depending on thickness. Adding a little pepper as it smokes. Never had a need for curing salt. With 2 boys in the house, never gets more than 2-3 days before its gone.

Mine is 36" x 14" x 1.5". Nicest slab of ash I've ever seen. I drilled an extra hole in each leg to prevent the bracket from twisting. Have 4 lag bolts holding the ash to the brackets. Set edge off ash about 1/2" away from smoker.
